Rubinstein Bagels
Many Seattleites scorn the city's dearth of quality bagels, but baker Andrew Rubinstein is aiming to change that with his bagel company Rubinstein Bagels, where he makes long-fermented, kettle-boiled, hand-rolled, stone hearth-baked bagels with a sourdough starter. His tagline: "These are the bagels you've been looking for." He's opened a new shop near the Amazon Spheres. The menu includes bagels (of course) in flavors like shallot, rosemary salt, and jalapeño white cheddar, as well as coffee and bagel sandwiches. There's also duck fat matzo ball soup and a soup of the day.
